This is another cake born out of necessity! The cake I had originally planned on making was unfortunately not to be due to time and health constraints, so.... I only had a few hours left to come up with something. I needed it to be quick and easy. The only fixed idea I had was that it had to be LEGO theme. I've seen various cupcake cakes on other websites and thought they looked fun and very "doable", I'd just never made one. One box of LEGO, 28 cupcakes, and many chocolate rocks later this is what emerged. I was thrilled by how much excitement the cupcake portion of this design caused. I was scared that Evan might feel slighted that he'd only got cupcakes, but it didn't seem to be a problem at all - the novelty factor ran high on this one. Everyone loved getting to pick which cupcake they wanted and then just pulling it away. It really saved on time spent cutting a cake too! I think this is a great option for those who might be baking for larger groups, preschoolers or young children in a classroom setting. I hope you like it!
