Almond Muffins

1 Cup Sliced Almonds
1 Tsp. Almond Extract
2 Cups All Purpose Flour
1/3 Cup Sugar
1 Tbs. Baking Powder
Tsp. Salt
1 Egg
1 Tbs. Butter Or Margarine (Melted)

In a large mixing bowl blend flour, sugar, baking soda, and salt. In a medium bowl beat eggs with milk and almond extract. Add egg mixture to the flour mixture and stir only until flour is moistened. Add 1-cup almond and stir lightly. Fill greased cups of muffin pan 1/3 full.
Top with remaining almonds and bake in preheated oven @ 400 degrees for 20 to 25 minutes.

Makes about 12 regular size muffins or 6 Texas size muffins.
