Banana-Nut Muffins

 

2/3 Cup Chopped Walnuts Or Pecans
2-3 Bananas (Over-Ripe And Mashed)
Tsp. Nutmeg
2 Cups All Purpose Flour
1/3 Cup Sugar
1 Tbs. Baking Powder
Tsp. Salt
Tsp. Vanilla Extract
1 Egg
1 Cup Milk
2 Tbs. Butter Or Margarine (Melted)

 

In a large bowl mix flour, baking soda, sugar, nutmeg, and salt. In a medium-mixing bowl beat eggs with milk and vanilla extract. Add egg mixture and mashed bananas to flour mixture. Stir only until flour is moistened. Fold in walnuts but save about 3 tbs. or so to sprinkle over the top of batter before baking. Fill greased cups of muffin pan 1/3 full and sprinkle with remaining nuts before baking. Bake in a preheated oven @ 400 degree for about 20 to 25 minutes.

Makes 12 regular size muffins or 6 Texas size muffins.
