Lemon-Poppy Muffins 

1 Whole Lemon
Tsp. Lemon Extract
1 Tbs. Poppy Seeds
2 Cups All Purpose Flour
1/3 Cup + 2 Tbs. Granulated Sugar
1 Tbs. Baking Powder
Tsp. Salt
1 Egg
1 Cup Milk
1 Tbs. Butter or Margarine Melted

In a large bowl combine flour, baking soda, sugar, and salt. In a medium bowl beat eggs with milk and lemon extract. Grate lemon rind into egg mixture. Add egg mixture to flour mixture, stir in poppy seeds, and be sure to stir only until flour is moistened. Fill greased cups of muffin pan 1/3 full and bake in a preheated oven @ 400 degrees for 20 to 25 minutes.

Makes 12 regular size muffins or 6 Texas size muffins.
