Growing native seeds. 

We grow the 300-year-old Native American strain of chile in order to preserve the planet’s seed stock, and to revive the historical chile industry in Chimayo. 

 

Our institute follows the traditional Northern New Mexico way of growing Chimayo Red chile.  During the growing season, chile turns green first and then after a few weeks it turns red.  When chile is green it is good for food, but the seeds are not mature.  Since our institution grows for seed preservation purposes, we harvest when the crop turns red.  By replenishing the seed stock each year, we assure the maintenance of the planet’s native genetic material important to the scientific community, and make certain that local farmers have an ample supply of seed to continue growing the heirloom crop.

We farm our chile by using 100% natural cultivation methods.  We use;

 

1. row-crop irrigation,

2. no chemicals or pesticides,

3. we hand harvest,

4 sun dry the chile, and

5. remove the seeds and stems before grinding.
